I don’t know what this sudden obsession.with pastry is… But I can’t say it is a problem! Today I made brioche buns, again using Leith’s and Waldegrave’s bible. 3.5 grams Yeast was creamed with 1tsp sugar and 2tbsp water, then kneeded with 225grams flour, 4 tsp sugar, pinch of salt, 55grams melted butter and 2 beaten eggs. This was proven for one hour and then I made the dough into small circles which were proven for a further 20minutes. After 13 minutes in a 200 degree oven with a glaze made from one egg, 1tsp water and 1 tsp sugar they were perfect! I might use a bit more sugar next time, and a tad mpre butter, but they were actually delicious! Pictures below.
